This is one of the national dishes of Guatemala, but the first time I tasted it I was reminded of my Nana’s homemade beef stew. The dish gets its name—which means “threads” in Spanish—from the fact that the cooked meat is shredded. I add a topping of potatoes and pearl onions, and I serve the stew in a “bowl” of acorn squash. It is fine to present it this way, but if you want to skip that step, I’ll understand (so would Nana).
